Add the chocolate to a microwave safe bowl and microwave for 30 seconds. Stir as much as you can. Microwave in additional 20 second increments, stirring well until you can stir it smooth. 1 cup Chocolate Chips
Dip one half of a graham cracker square into the chocolate (I like to dip, on the angle). Use a spoon as needed to get the chocolate higher onto the cookie to cover half. Place the squares onto a piece of parchment paper and let the chocolate set. 16 Graham Cracker Squares
Add the white chocolate and peppermint extract to a microwave safe bowl and microwave for 30 seconds. Microwave in additional 20 second increments, stirring well until you can stir it smooth. 1 cup chopped White Chocolate, 1/2 tsp peppermint extract
Dip the other half of each graham cracker into the chocolate, using a spoon as needed to get the chocolate to cover the cookie completely.
Set back onto the parchment paper, and sprinkle the tops with Peppermint Candy Cane pieces.
Let sit until the chocolate is hardened.
