Peppermint Bark Graham Crackers

These Peppermint Bark Graham Crackers are graham crackers coated in milk chocolate and peppermint flavored white chocolate, and topped with crushed peppermint candy canes! It's a fun twist on peppermint bark, and gives it such a nice extra crunch! A perfect easy treat for the holidays!

Ingredients

  • 1 cup Chocolate Chips
  • 16 Graham Cracker Squares
  • 1 cup chopped White Chocolate
  • 1/2 tsp peppermint extract
  • 1/4 cup crushed Peppermint Candy Canes

Instructions

  • Add the chocolate to a microwave safe bowl and microwave for 30 seconds. Stir as much as you can. Microwave in additional 20 second increments, stirring well until you can stir it smooth. 1 cup Chocolate Chips
  • Dip one half of a graham cracker square into the chocolate (I like to dip, on the angle). Use a spoon as needed to get the chocolate higher onto the cookie to cover half. Place the squares onto a piece of parchment paper and let the chocolate set. 16 Graham Cracker Squares
  • Add the white chocolate and peppermint extract to a microwave safe bowl and microwave for 30 seconds. Microwave in additional 20 second increments, stirring well until you can stir it smooth. 1 cup chopped White Chocolate, 1/2 tsp peppermint extract
  • Dip the other half of each graham cracker into the chocolate, using a spoon as needed to get the chocolate to cover the cookie completely.
  • Set back onto the parchment paper, and sprinkle the tops with Peppermint Candy Cane pieces.
  • Let sit until the chocolate is hardened.

Notes

  • Chocolate Graham Crackers - Instead of Honey Graham Crackers use Chocolate Graham Crackers for an extra chocolatey dessert.
  • Crush the Candy Canes - Add the unwrapped candy canes to a plastic bag and use a meat mallet, or rolling pin to crush them into pieces.
  • Melt Slowly - Be careful not to overheat the chocolate. Melt it in short intervals and stir a lot between each, getting it smooth without burning it. Chocolate that gets over heated will likely end up with white spots when it dries. If this does happen, its perfectly safe and still edible - it just might not look as pretty for sharing!
