Ingredients

For the Cookie Dough:

  • 1 1/2 cups all purpose flour
  • 1/2 cup unsalted butter (softened)
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 3 TBS whole milk
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 3/4 cup mini chocolate chips

For Decorating the Snowmen:

  • 12 mini Oreos (separated and frosting scraped off and discarded)
  • 24 Dark Chocolate Rolos
  • Holly Sprinkle Mix
  • 2 cups Ghiradelli White Chocolate Melting Wafers
  • Snowman Sprinkle Mix

Instructions

For the Cookie Dough:

  • Preheat the oven to 350 F. Line a baking pan with parchment paper.
  • Spread the flour onto the parchment paper lined pan and bake in the oven for 5 minutes. Let it cool completely. Whisk the flour to remove any clumps, then set aside. 1 1/2 cups all purpose flour
  • Cream together the butter, brown sugar, and granulated sugar in a large bowl for a couple minutes until light and fluffy. 1/2 cup unsalted butter, 1/2 cup brown sugar, 1/4 cup granulated sugar
  • Add in the vanilla and milk and mix them into the dough. 3 TBS whole milk, 1 tsp vanilla extract
  • Slowly pour in the flour and salt while stirring the mixture, and mix them together until you have a nice soft dough. 1/4 tsp salt
  • Add in the chocolate chips, and stir them gently into the dough. 3/4 cup mini chocolate chips
  • Scoop the dough into 24 equal portions, about 1.5 TBS in size. Roll the cookie dough balls into smooth balls. Place them on a lined baking sheet.
  • Place the pan in the fridge and chill for at least 30 minutes.

For Decorating the Snowmen:

  • Melt about 1/4 cup of the melting wafers in the microwave in 30 second intervals, stirring after each until you can stir it smooth. 2 cups Ghiradelli White Chocolate Melting Wafers
  • Use a skewer to dab a little melted chocolate onto the top of half an Oreo. Immediately top with an upside down Rolo candy. 12 mini Oreos, 24 Dark Chocolate Rolos
  • Add a little dot of the white chocolate to the back of the holly sprinkles and place them on the snowman hats to decorate. Set all of them aside until needed. Holly Sprinkle Mix
  • Add the remaining White Chocolate Melting Wafers to a double boiler and heat over medium low heat until you can stir the chocolate smooth, and it is completely melted. 2 cups Ghiradelli White Chocolate Melting Wafers
  • Drop a cookie dough ball, one at a time into the melted white chocolate. Lift it out with a fork, and tap the fork on the edge of the bowl to drip off any excess chocolate. Then transfer the ball back to the parchment paper.
  • Immediately decorate the cookie dough ball with two black sugar pearl sprinkles for the eyes, a carrot sprinkle for the nose, and more black pear sprinkles for the smile. Snowman Sprinkle Mix
  • Add a decorated hat on top of the snowman head, and hold it steady for a few seconds until the chocolate is set.
  • Repeat with the rest of the cookie dough balls.
  • Place the pan back in the fridge to chill, before enjoying!

Notes

  • Heat treat the flour. Microwave your flour in 30 second increments, stirring after each, until hot throughout (it only takes about 1 minute in my experience), or bake extra and store it until needed at 350 F on a rimmed cookie sheet for about 5 minutes, until the flour reaches an internal temperature of 160 F. Let the flour cool for about 10 minutes before using in the cookie dough
  • Use a cookie scoop to portion out the cookie dough into even sizes. Then roll them into smooth balls with your hands.
  • Use mini chocolate chips to spread them more evenly throughout the cookie dough balls.
  • Work Quickly - Be sure to work quickly when decorating the snowmen's faces. We want to get the sprinkles in place, and to adhere to the melted white chocolate quickly, as the chocolate hardens.
  • Adhering the Pieces - If you can't get the hats, or any of the face pieces on to the snowman faces before the cookie dough balls harden, you can dab a little melted white chocolate onto the ball and then place the piece on.
  • Different Sprinkles - If you can't find the black sugar pearls and carrot sprinkles for the snowmen's faces, you can instead use black icing gel to make the eyes and smile. You can use an orange sprinkle, or orange Tic Tac for the nose.
