Snickerdoodle Cookie Bars

If you love snickerdoodles, you'll love these snickerdoodle bars! Instead of rolling out one cookie at a time, these bars are quickly pressed into a pan and baked, making them quicker and perfect for sharing! These bars are soft, and chewy, with a buttery flavor and the perfect warm cinnamon sugar flavor in every bite.

Ingredients

  • 1 cup unsalted butter (softened)
  • 1 cup brown sugar (packed)
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 2 tsp vanilla extract
  • 2 1/2 cups all purpose flour (spooned and leveled)
  • 1 tsp baking powder
  • 1 tsp cream of tartar
  • 1 tsp ground cinnamon
  • 1/2 tsp salt

For the Cinnamon Sugar Topping:

  • 3 TBS granulated sugar
  • 2 tsp ground cinnamon

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Line a 9×13 pan with parchment paper, and lightly grease with nonstick spray. Set it aside.
  • Add the butter, brown sugar, and granulated sugar to a large bowl and mix them together for 2 to 3 minutes, until light and fluffy. 1 cup unsalted butter, 1 cup brown sugar, 1/2 cup granulated sugar
  • Add in the eggs, and vanilla extract and stir until just combined. 2 large eggs, 2 tsp vanilla extract
  • Add in the dry ingredients, flour, baking powder, cream of tartar, cinnamon, and salt. Stir until you have a soft cookie dough. 2 1/2 cups all purpose flour, 1 tsp baking powder, 1 tsp cream of tartar, 1 tsp ground cinnamon, 1/2 tsp salt
  • Scoop the dough into the prepared pan and press the dough all the way to the corners, and evenly across the top.

For the Cinnamon Sugar Topping:

  • Mix the sugar and cinnamon together for the cinnamon sugar topping. 3 TBS granulated sugar. 2 tsp ground cinnamon
  • Sprinkle the cinnamon sugar evenly over the top of the bars.
  • Bake the bars in the preheated oven until the top is lightly golden, and a toothpick inserted in the center comes out clean. About 15 to 22 minutes.
  • Remove the bars from the oven and let them cool completely before slicing and enjoying.

Notes

  • Check for Doneness - Check the bars with a toothpick inserted starting at the lowest baking time, to prevent overbaking. You want the toothpick to come out clean, but we don't want the bars dry and overbaked, we want them soft and chewy.
  • The Icing on Top - Make a simple icing of 1 cup powdered sugar, with about 2-3 TBS heavy cream, and 1/2 tsp vanilla extract. Drizzle this one top of the bars for extra sweetness.
  • Cut the Recipe in Half - If you want a smaller batch of these bars you can cut the recipe in half and bake them in an 8x8 pan. They will not need to bake quite as long, so watch the baking time closely.
