Preheat the oven to 350 degrees Fahrenheit. Line a 9×13 pan with parchment paper, and lightly grease with nonstick spray. Set it aside.
Add the butter, brown sugar, and granulated sugar to a large bowl and mix them together for 2 to 3 minutes, until light and fluffy. 1 cup unsalted butter, 1 cup brown sugar, 1/2 cup granulated sugar
Add in the eggs, and vanilla extract and stir until just combined. 2 large eggs, 2 tsp vanilla extract
Add in the dry ingredients, flour, baking powder, cream of tartar, cinnamon, and salt. Stir until you have a soft cookie dough. 2 1/2 cups all purpose flour, 1 tsp baking powder, 1 tsp cream of tartar, 1 tsp ground cinnamon, 1/2 tsp salt
Scoop the dough into the prepared pan and press the dough all the way to the corners, and evenly across the top.
