These Snowman Rice Krispie Treats are such a fun, and festive, no-bake treat to make in the winter! We’ve got gooey squares of our favorite marshmallowey treat, decorated with melted white chocolate, and sprinkles, and candies to quick turn them into adorable snowmen!

Ingredients Needed
- Unsalted Butter – this gives a nice buttery flavor to the treats
- Mini Marshmallows – We want 7 whole cups of mini marshmallows to keep the treats extra gooey, and still hold their shape.
- Rice Cereal
- Vanilla – adds a little extra flavor to the marshmallow coating
- Salt – adds just a little flavor to the treats. If you use salted butter you can skip adding extra salt
- White Chocolate Chips – High Quality White Baking Chips, or White Candy Melts will work for dipping our snowmen crispies into and making them white.
- Black Sugar Pearls – These black pearl sprinkles make the eyes, mouth, and buttons of our snowman.
- Orange Candy Sprinkles – You can use these cute carrot sprinkles, or a tic tac, or any orange sprinkle.
- Round Peppermint Candies – To make Earmuffs
- Red Candy Melts – We melt this and piper on a scarf, and the top of the ear muffs
- Pull and Peel Licorice – This is optional, but adds a cute extra touch to the snowman’s face.
How to make Snowman Rice Krispie Treats?
Step 1: Melt the Butter and Marshmallows. Add the butter to a large pot and melt over medium low heat. Once melted add in the mini marshmallows and melt slowly, stirring often until melted.
Step 2: Stir in the Cereal. Remove from the heat and stir in the vanilla extract and salt. Stir in the cereal, and remaining marshmallows.
Step 3: Press into the Pan. Scoop the cereal mixture into a lined 9×13 pan, and spread it out evenly, pressing gently to flatten the top. But don’t press too hard, as we want to keep our treats so soft and gooey. Let the bars sit for about 30-45 minutes until set, and cooled. Then slice into 15 equal bars.
Step 4: Dip in White Chocolate. Melt white chocolate in the microwave in 20-30 second increments, until you can stir it totally smooth and creamy. Dip the face of one rice krispie treat at a time into the white chocolate, deep enough to coat. Then lift it up and let the extra drip off back into the bowl.
Step 5: Decorate. While the chocolate is still melted, top the rice crispy treat with two eyes, a nose, a smile, and two to three buttons. Stick the bottom of a peppermint candy into the melted white chocolate bowl and attach it to the side of the snowman face for earmuffs.
Step 6: Add the Scarves. Melt the red candy melts in a small bowl in 20 second increments until you can stir it smooth. Scoop the candy melt into a piping bag, snip off the corner and pipe a scarf onto the snowman below the face, and above the buttons. Pipe a line above the snowman’s face and stick a Pull and Peel licorice piece on top for the top of the earmuffs.
Tips and Tricks:
- Use Fresh Ingredients – Use fresh marshmallows, and fresh cereal for the best results. If either are slightly stale your treats are more likely to be dry and stale too.
- Cook on Medium Low Heat – We want to melt the butter and marshmallows on medium low to keep our marshmallow mixture nice and gooey. We want less moisture to evaporate from the mixture keeping the treats extra soft.
- Press Gently – You don’t want to crush your rice krispie treats down when pressing them into the pan. You want to gently press them down a bit with a greased spatula or your hands.
Storage Instructions:
Transfer the bars into an airtight container and store them at room temperature for 3 to 4 days. Don’t keep them in fridge or the bars will get too hard.

Snowman Rice Krispie Treats
Ingredients
For the Rice Krispie Treats
- 1/2 cup unsalted butter (1 stick)
- 7 cups mini marshmallows (divided)
- 1 tsp vanilla extract
- 1/4 tsp salt
- 8 cups crisp rice cereal
For Decorating:
- 2 cup white baking chips
- Black Sugar Pearls
- Carrot Sprinkles (or orange Pez)
- 30 Round Peppermint Candies
- 1/2 cup Red Candy Melts
- 1 Pull and Peel Licorice
Instructions
- Line a 9×13 baking pan with parchment paper. Lightly grease the parchment and pan with nonstick spray. Set aside.
- Add the butter to a large pot over medium low heat. Let it melt completely. 1/2 cup unsalted butter
- Add in 6 cups of the marshmallows, and stir together gently until marshmallows are completely melted. 7 cups mini marshmallows
- Remove the pan from the heat and stir in the vanilla extract and salt. 1 tsp vanilla extract, 1/4 tsp salt
- Add in the cereal, and remaining 1 cups of marshmallows and stir until the cereal is coated evenly with the melted marshmallow mixture, and the other marshmallows just start to melt. 8 cups crisp rice cereal
- Scoop the mixture into the prepared pan, and using a greased rubber spatula gently press the mixture down into the pan, but do not press them hard. Let the treats sit for about 30-45 minutes.
- Cut the rice krispie treats into 15 even pieces.
For Decorating:
- Add the white baking chips to a medium sized bowl, and melt in 20 second increments until you can stir the mixture smooth, and its totally melted. 2 cup white baking chips
- Take one rice krispie square at a time and dip it into the melted white chocolate, covering the top completely.
- Place two black sugar pearls for eyes, a carrot for the nose, black pearls for the mouth, and a couple buttons at the bottom. Black Sugar Pearls, Carrot Sprinkles
- Dip each of the peppermint candies, one at a time into the melted white chocolate and place one on each side of the snowman's face. 30 Round Peppermint Candies
- Let the white chocolate set.
- Add the Red Candy Melts to a small bowl and microwave in 20 second increments, stirring after each increment, until you can stir it smooth. 1/2 cup Red Candy Melts
- Transfer the red candy to a ziptop bag and snip the corner. Pipe the red candy over the top of the snowman between the face and buttons to create the appearance of a red scarf.
- Cut a little off the top of the snowman on each corner to make it more round.
- Cut the pull and peel licorice in half, and separate each piece. 1 Pull and Peel Licorice
- Pipe the red candy on top of the snowman's head connecting the two mints. Place half a pull in peel licorice piece on top of the head as the top of the earmuffs. Hold it there until set. Trim any off the sides as needed.
- Let the treats sit until the red candy is solid, then enjoy, or store in an airtight container at room temperature for up to 3 days.
