- unsalted butter – do not substitute margarine or vegan butters for this recipe, we need the real deal.
- granulated sugar and brown sugar – classic snickerdoodles only have granulated sugar, but I love the added brown sugar for chewiness and extra caramel flavor

- all purpose flour – make sure to spoon and level your flour to get the right amount, and not end up with dry cookie bars

How to make Snickerdoodle Bars
Step 1: Mix the wet ingredients. Cream together the butter, granulated sugar, and brown sugar for a couple minutes until its light and fluffy. Add in the eggs, and vanilla extract and mix until just combined.
Step 2: Add in the dry ingredients. Add the flour, cream of tartar, baking powder, and salt into the dough and mix until you have a nice soft cookie dough.
Step 3: Add the dough to the pan. Scoop the cookie dough into a parchment paper lined baking pan, and flatten it evenly across the top. Grease your hand, or a spatula with nonstick spray to make this easier. Combine the extra sugar and cinnamon in a small bowl and sprinkle it across the top of the bars.

- Cut the Recipe in Half – If you want a smaller batch of these bars you can cut the recipe in half and bake them in an 8×8 pan. They will not need to bake quite as long, so watch the baking time closely.
Storage Instructions
Once cooled, these cinnamon sugar bars can be stored in an airtight container at room temperature for up to 3 or 4 days. They can also be stored in the fridge if you enjoy your treats chilled.

Snickerdoodle Cookie Bars
Ingredients
- 1 cup unsalted butter (softened)
- 1 cup brown sugar (packed)
- 1/2 cup granulated sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 1/2 cups all purpose flour (spooned and leveled)

For the Cinnamon Sugar Topping:
- 3 TBS granulated sugar
- 2 tsp ground cinnamon
Instructions
- Preheat the oven to 350 degrees Fahrenheit. Line a 9×13 pan with parchment paper, and lightly grease with nonstick spray. Set it aside.
- Add the butter, brown sugar, and granulated sugar to a large bowl and mix them together for 2 to 3 minutes, until light and fluffy. 1 cup unsalted butter, 1 cup brown sugar, 1/2 cup granulated sugar
- Add in the eggs, and vanilla extract and stir until just combined. 2 large eggs, 2 tsp vanilla extract
- Add in the dry ingredients, flour, baking powder, cream of tartar, cinnamon, and salt. Stir until you have a soft cookie dough. 2 1/2 cups all purpose flour, 1 tsp baking powder, 1 tsp cream of tartar, 1 tsp ground cinnamon, 1/2 tsp salt
- Scoop the dough into the prepared pan and press the dough all the way to the corners, and evenly across the top.
For the Cinnamon Sugar Topping:
- Mix the sugar and cinnamon together for the cinnamon sugar topping. 3 TBS granulated sugar. 2 tsp ground cinnamon
- Sprinkle the cinnamon sugar evenly over the top of the bars.
- Bake the bars in the preheated oven until the top is lightly golden, and a toothpick inserted in the center comes out clean. About 15 to 22 minutes.
- Remove the bars from the oven and let them cool completely before slicing and enjoying.
