Ingredients Needed
- Ritz Crackers: Use the real deal for the best result. Discard the ones that are crumbly or falling apart.
- Marshmallow Cream: Also called Marshmallow Fluff, this gives these the classic S’more flavor
- Chocolate Chips: You can use milk chocolate, semi sweet, or dark chocolate. You can even use white baking chips too.
- Graham Crackers: I like to crumble a few and sprinkle them on top of the melted chocolate, but you can skip them if you want.
- Dehydrated Marshmallows: A few on top to add a little crunch, extra marshmallow flavor and a cute look!
How to make Ritz S’more Cookies
Step 1: Spread Marshmallow. Add a dollop of marshmallow fluff on top of one of the crackers. Add another cracker on top of the marshmallow to make a little cookie sandwich.
Step 2: Melt the Chocolate. Add the chocolate chips to a microwave safe bowl and melt in 30 second increments for up to 1 minute. Stir as much as you can after each time in the microwave. Melt in additional 20 second increments, stirring until the chocolate is melted and smooth.
Step 3: Dip the cookies into the melted chocolate. Lift the cookie out with a fork and tap the fork on the side of the bowl to remove the extra chocolate. Place onto the prepared cookie sheet.
Step 4: Add the Toppings. Sprinkle some graham cracker crumbs and dehydrated marshmallows on top of the “cookies” while the chocolate is still melted. Let the cookies sit at room temperature until the chocolate is set.
Tips and Tricks
- Use High Quality Ingredients – use quality chocolate chips, or a quality chocolate bar for the best results.
- Don’t Fill to Much – While it feels like the more marshmallow fluff the better, you only want to add about 1/2 Tablespoon per cracker. The marshmallow will seep out of the side of the crackers, and even push through the hardened chocolate too.
- Double the Recipe – As is, this recipe makes 24 stuffed smores cracker cookie sandwiches. The recipe can easily be doubled for a bigger group.

Storage Instructions
The cookies can be stored in a cool place, in an airtight container for up to 4 or 5 days. If your home is cool you can keep them on the counter, or if its warm store them in the fridge. Separate the layers of cookies with parchment paper between each layer.

Ritz Smores Cookies
Ingredients
- 48 Ritz Crackers
- 3.5 oz Marshmallow Fluff
- 18 oz High Quality Chocolate Chips
- 1 TBS coconut oil (optional)
- 1/4 cup Graham Cracker Crumbs (optional)
- 1/4 cup Dehydrated Mini Marshmallows (optional)
Instructions
- Line a large baking sheet with parchment paper or wax paper.
- Lay the 24 crackers on the baking sheet, leaving a little space between each one. 48 Ritz Crackers
- Spread 1/2 TBS of Marshmallow Fluff onto the top of each cracker. 3.5 oz Marshmallow Fluff
- Gently press another cracker on top of the marshmallow fluff, to make a sandwich cookie. Repeat with additional crackers.
- Add the chocolate chips and coconut oil to a large microwave safe bowl. Microwave in 30 second increments, stirring between each interval, for 1 minute. Microwave in 20 second increments, stirring as much as you can. Do not melt the chocolate fully in the microwave, you want to stir it to melt. 18 oz High Quality Chocolate Chips , 1 TBS coconut oil
- Drop a sandwich cookie into the chocolate. Use a fork to flip it over and coat completely.
- Lift the cookie out of the chocolate with the fork and tap the fork on the side of the bowl to remove any excess chocolate.
- Transfer the cookie to the lined baking sheet. Repeat with additional cookies.
- While the chocolate is still wet, top the cookies with graham cracker crumbs, and mini marshmallows.
- Let the cookies sit until the chocolate is set.
