Line a large baking sheet with parchment paper or wax paper.
Lay the 24 crackers on the baking sheet, leaving a little space between each one.
Spread 1/2 TBS of peanut butter onto the top of each cracker.
Gently press another cracker on top of the peanut butter, to make a sandwich cookie. Repeat with additional crackers.
Add the chocolate chips and coconut oil to a large microwave safe bowl. Microwave in 30 second increments, stirring between each interval, for 1 minute. Microwave in 20 second increments, stirring as much as you can. Do not melt the chocolate fully in the microwave, you want to stir it to melt.
Drop a sandwich cookie into the chocolate. Use a fork to flip it over and coat completely.
Lift the cookie out of the chocolate with the fork and tap the fork on the side of the bowl to remove any excess chocolate.
Transfer the cookie to the lined baking sheet. Repeat with additional cookies.
Top the cookies with sprinkles or sea salt when the chocolate is still melted.
Let the cookies sit until the chocolate is set.
