You should easily be able to make the cream in advance. You can likely make the caramels in advance as well, I'd make sure you cook it a degree or two softer to make sure it doesn't harden sitting out (The fridge would make it far too cold to roll the caramels up) nicely.

Would any part of this be able to be made ahead of time? If I made the cream and kept it wrapped on the counter for a couple days, could I make the caramel and then put it together later? Or could I make the caramel and leave it in the pan in the fridge for a day before making the cream and putting it all together? Or will this only work if I make both and assemble it all in one day?

We have a christmas contest going on right now, and one person will win $70 to amazon and a copy of my cookbook :)

I made these to put in gift baskets and my biggest problem was keepimg my husband and son out of them! They are a new family favorite! The caramel is soft but not too soft and they cut like a dream after I chilled the rolls in the fridge. Thank you for this recipe!

Hi, I'm not sure where you see that it says to add 2 cans, I searched through the recipe and I don't see it, but if you can tell me where it is I will update the recipe. You will want ONE can that is 12 oz. Some cans are 5oz so if you have those you'd need to use 2 + cans.

The recipe calls for one can of evaporated milk but in the instructions it says 2 cans.
Just wondering if you use 1 or 2 cans?

You'll have to check that your candy thermometer is accurate to make sure you're getting the right temperature for the caramel. The caramel should be chewy, but not soft, it shouldn't really squish between your fingers.

These were good, but too chewy and soft. It would have been better if the Carmel was firmer and easier to roll and handle. Too much work for what it is. I’ll buy cowtails next time instead of making them.
