- Creamy Peanut Butter
- High Quality Chocolate Chips – I like Ghiradelli or Guittard
- Sprinkles or Sea Salt – for topping
How to make Ritz Peanut Butter Cookies
- Spread peanut butter over the top of the ritz cookies and place them on a lined baking sheet. You’ll want about 1/2 TBS for each cookie, just know the thicker the peanut butter, your cookie top may slide around a bit when dipping in the chocolate.
- Top with the second cracker to make a little cookie sandwich.
- Melt chocolate chips with coconut oil in a microwave safe bowl. Melt in 30 second increments for 1 minute, and stir as much as you can. Melt in additional 20 second increments, stirring the chocolate until smooth.
- Dip the cookies into the melted chocolate. Lift the cookie out with a fork and tap the fork on the side of the bowl to remove the extra chocolate. Place onto the prepared cookie sheet. Top with your choice of toppings, such as sprinkles, shredded coconut, crushed nuts, or sea salt.

- Double the Recipe – As is, this recipe makes 24 stuffed peanut butter cookie sandwiches. The recipe can easily be doubled for a bigger group.
Ritz Cookie Varieties
- Salted Caramel – Top the crackers with a thin layer of melted caramel, then dip in chocolate as directed and add a sprinkle of coarse sea salt on top.
- S’mores Style – Add a dollop of marshmallow fluff on top of the crackers, instead of, or in addition to the peanut butter. Sprinkle the tops with graham cracker crumbs if desired.

Ritz Cracker Cookies
Ingredients
- 48 Ritz Crackers
- 3/4 cup creamy peanut butter
- 18 oz High Quality Chocolate Chips
- 1 TBS coconut oil
- 1 TBS flaky sea salt (optional)
- 1 TBS Christmas sprinkles (optional)
Instructions
- Line a large baking sheet with parchment paper or wax paper.
- Lay the 24 crackers on the baking sheet, leaving a little space between each one.
- Spread 1/2 TBS of peanut butter onto the top of each cracker.
- Gently press another cracker on top of the peanut butter, to make a sandwich cookie. Repeat with additional crackers.
- Add the chocolate chips and coconut oil to a large microwave safe bowl. Microwave in 30 second increments, stirring between each interval, for 1 minute. Microwave in 20 second increments, stirring as much as you can. Do not melt the chocolate fully in the microwave, you want to stir it to melt.
- Drop a sandwich cookie into the chocolate. Use a fork to flip it over and coat completely.
- Lift the cookie out of the chocolate with the fork and tap the fork on the side of the bowl to remove any excess chocolate.
- Transfer the cookie to the lined baking sheet. Repeat with additional cookies.
- Top the cookies with sprinkles or sea salt when the chocolate is still melted.
- Let the cookies sit until the chocolate is set.
