How to make Pecan Pie Balls
Step 1: Make the Filling. Add the pecans, graham cracker crumbs, brown sugar, corn syrup, melted butter, vanilla extract, and salt to a medium bowl and mix it together until you have a sticky mixture.
Step 2: Roll into Balls. Scoop about 2 teaspoons of the mixture and roll it into a ball. The mixture is very sticky, and might stick to your hands, wash them with cold water often. Place the balls in the freezer to chill for 30 minutes up to 2 hours.
Step 3: Melt the Chocolate. Melt the chocolate in the microwave in 20-30 second increments, stirring as much as you can after each.
Step 4: Dip the Balls in the Chocolate. Dip one ball at a time into the chocolate, use a fork to cover the ball completely in the chocolate. Lift the ball out, and let the excess chocolate drip back into the ball. Place back on parchment paper until chocolate is firm.
Tips and Tricks:
- Too Sticky: The mixture is very sticky, wash your hands with cold water a few times throughout, or spray with nonstick spray. You can also chill the mixture for 10-15 minutes if needed.
- Different Nuts: It won’t be pecan pie, but you can always try a variety of nuts, or use different nuts if desired.
Storage Instructions
Store the pecan pie balls in an airtight container in the fridge for up to 2 weeks. You can also freeze the balls. Freeze in a single layer on a parchment paper lined baking sheet, then transfer to a freezer safe container where they can be stored for up to 2 months. My husband even likes to eat them frozen, but I recommend thawing them in the fridge before serving.

Instructions

- Dip one ball at a time into the melted chocolate. Use a fork to coat the ball completely in the melted chocolate. Using the same fork lift the ball out of the chocolate. Tap it on the side of the bowl to help extra chocolate drip back into the bowl.
