I love how subtle the eggnog flavor is, glad you did too!

I'm not a fan of eggnog but my husband is so I thought I'd give this recipe a try. So very glad I did! I made 2 or 3 batches last year and now plan to make just as many or even more this year to gift to others. Everyone loved this caramel, including myself. Definitely a keeper for our household that will likely be made every year!

In reply to <a href="https://bestchristmasdesserts.com/eggnog-caramels/#comment-1146">Dawn</a>.

Hi Dawn, it sounds like your candy thermometer temperatures must be off, I'm sorry. You can test your thermometer by boiling water and seeing what the temperature on the thermometer reads. It should be 212 F. But whatever yours reads (likely lower) you will adjust your candy temperatures accordingly. So for example if it says 200 F and the water is boiling, you'll want to lower the temperature for a recipe like this that same amount!

To try and fix it you can try heating it back up on the stove, and adding liquid back in and bringing it back to the right temperature.

Yes, the ones I use are precut squares of wax paper and cello wrap from amazon. So much easier. Let me know how they go for you!
