This by far the best shortbread cookie recipe, I think the powdered sugar and amount of corn starch in this recipe really make it unique and the best, Im going to use dried tart cherries for my next batch. Thank you for sharing

In reply to Penny Myers. It should work fine being doubled, or tripled if your mixer can handle it. I think mine would only be able to do double.

In reply to Penny Myers. It should freeze fine. I'd freeze it in the logs, then thaw in the fridge overnight, then bake.
