The vanilla icing, that is white on top of the cookies. You can drizzle them with the icing for a little extra sweetness, and looks.

You should easily be able to make the cream in advance. You can likely make the caramels in advance as well, I’d make sure you cook it a degree or two softer to make sure it doesn’t harden sitting out (The fridge would make it far too cold to roll the caramels up) nicely.

If I made the cream and kept it wrapped on the counter for a couple days, could I make the caramel and then put it together later? Or could I make the caramel and leave it in the pan in the fridge for a day before making the cream and putting it all together? Or will this only work if I make both and assemble it all in one day?
