You should easily be able to make the cream in advance. You can likely make the caramels in advance as well, I'd make sure you cook it a degree or two softer to make sure it doesn't harden sitting out (The fridge would make it far too cold to roll the caramels up) nicely.

Would any part of this be able to be made ahead of time? If I made the cream and kept it wrapped on the counter for a couple days, could I make the caramel and then put it together later? Or could I make the caramel and leave it in the pan in the fridge for a day before making the cream and putting it all together? Or will this only work if I make both and assemble it all in one day?

I made these and they are DELICIOUS! I doubled the recipe and used a 9x13 pan. I’ve never had so many compliments. Perfect bar cookie. So delicious. Since I doubled the recipe, I actually more than doubled the caramel. I used 3- bags. 11 oz each. Yum!!!

Oops, I'll fix that. I use a 9x9 pan. An 8x8 would work too, just a little thicker ;)

Do you use a 9x9” pan or an 8x8” pan? In the description you say 9x9 but in the instructions you say 8x8. They sound delicious and I want to be sure to make them correctly.
