You should easily be able to make the cream in advance. You can likely make the caramels in advance as well, I&#039;d make sure you cook it a degree or two softer to make sure it doesn&#039;t harden sitting out (The fridge would make it far too cold to roll the caramels up) nicely.]]></description>

If I made the cream and kept it wrapped on the counter for a couple days, could I make the caramel and then put it together later? Or could I make the caramel and leave it in the pan in the fridge for a day before making the cream and putting it all together?
